Thermometer: How High Up Evaporator Pipe Stack?

How high up the evaporator pipe stack do you install a thermometer?

Good question. I put mine just above the bottom flange in the first section of straight pipe above the base stack. That was more for convenience than anything related to accuracy of heat readings. At the time, I was on flat pans and frequently turning the pipe purple and getting a torch out the top, so I already knew it was too hot!

Is there an ideal stack temp for wood fired rigs?

I think stack temp may vary somewhat by evaporator brand and model. Smoky Lake Maple says that 1000 F - 1200 F is fine for my Silverplate evaporator.

I put mine at eye level for easy reading. Temp won’t vary much with height.
