I’ve encountered a bunch of people recently who claim that if you bottle higher than 190, you will get niter. I was under the impression that bottling temp doesn’t really matter as long as the syrup has been filtered immediately prior to bottling. Which is correct?

If you go above 190 degrees you will begin to make niter. Most bottle between 180 and 190 degrees maximum. I warm my glass containers in the oven before I put syrup in them.

Agreed on 180 to 190 range. Interestingly the manual says up to 200. 23068

So if you heat to 200, filter, and then bottle at 195, you’ll get niter?

Good find, I always heard the same 180/190. I always make sure I am over 180 and do my best to stay under 190. Good to know if I stray a few degrees over 190, it is not a biggie.
