Best digital thermometer for boiling / finishing

I've gone through three digital thermometers in two years. We boil 30-40 gallons of sap at a time. Finish on the stove.

Couple of questions:


Are instant read thermometers good for finishing?
Is there a good long stem digital thermometer you swear by?

I would never use a digital thermometer. I do not trust them to read correctly.
