I'm looking for a solution to use my Simplicity auto draw off on a reverse flow evaporator. My thoughts were to place a probe in each of the draw off locations and connect the 3 wire connection to a board which a switch could be used to take reading from the front or rear probe, isolating the other probe. Each probe has 3 wires and the head only has 1 set of connections. I'm having difficulty in visualizing so any input would be appreciated.

You can do that. I just ran 2 sets of wires from the probes to the control box. One set labeled A the other B. Then I connected the A or B as desired as I was boiling. I just pulled the A off and connected the B to reverse. That way a switch was never in danger of getting bumped and switched by mistake.

Maple flats that would work but I was hoping to configure a switch for each probe. Could really use a Radio Shack about now.
