dark swirls in candy

What makes the candy with a dark swirl in the large leaves? The inside is white, dry and crunchy. It's golden syrup with an invert of less than 2.
It has been through a dip.

Any help would be appreciated.

You stirring by hand or do you have a candy machine because if stirring by hand possiablity that you might be stirring it to fast cause i have a machine and never had any swirls in it,an occasional white spot
