Is sap foaming in the evaporator a problem if it's not getting out of the pan at all? Can I just let it go on, rather than keep knocking it down with defoamer?

Foam will trap in steam slowing down the evaporation process.

Foaming is the probably sign of bacteria, syrup will be ropey if loaded with bacteria! Just saying
