Compression Fitting for Thermometer Probe

I have a 1/4" threaded port for a short-stem thermometer on my bottler. I'd like to put one of my digital thermometer probes in its place and I'm having a heck of a time finding one that fits.

The 1/8" one (https://www.amazon.com/gp/product/B07RMDK9BM/ref=ppx_yo_dt_b_asin_title_o08_s00?ie=UTF8&th=1) I bought is too small. The 1/4" one (https://www.amazon.com/gp/product/B07QDHMPW3/ref=ppx_yo_dt_b_asin_title_o02_s00?ie=UTF8&th=1) is too big. The 3/16" one (https://www.amazon.com/FASPARTS-Compression-Fitting-Male-Connector/dp/B017L53QJS/ref=rtpb_2/133-0238443-2113266?pd_rd_w=JYCzc&pf_rd_p=d12edb90-0e5b-498c-816a-9ba65872c34f&pf_rd_r=EC0FP3GMZHNTGETTBZDQ&pd_rd_r=64e23f78-d4ee-4a09-812b-7d8f65c5c600&pd_rd_wg=JfBrI&pd_rd_i=B017L53QJS&psc=1) fits the probe fits through the nut and compression collar, but won't fit though the bottom portion. Could someone point me in the right direction? I'd really appreciate it.

You should be able to just drill out the "bottom" of the fitting to accommodate the probe. But just wondering are you going to use a copper compression ring on that probe? it could damage it. A rubber or plastic ferrule would be better. Jay

You know, I was considering drilling it out. It's so close. I was going to use the copper/brass? ring that came with it. I didn't know it could cause damage. Thanks for the heads up.

I also suggest a plastic or silicone O-ring instead of any metal, as long as it's rated for hot temperatures.
