How long can you leave sweet in the pan

I have 33 brix sweet frozen in the pan. How long will it keep normally without issues?

All depends on weather. We've had a freeze up here in the New England so I'll have sweet in the pan for at least a week. Later in the season, when things warm up, I reboil every few days to keep things sterile.

As long as it's frozen it will still be good for weeks. I've left it my evaporator for 3 weeks once and up to 2 weeks several times and it didn't spoil.
