should I worry that my stainless steel (single wall) stack glows at the angle and a jet shoots out the top when the AUF blower is on the owest setting?

A glowing stack is not necessarily a bad thing. Is your rig a 2x3? Shorter evaporators send more flames up the stack which causes the glowing effect. The flames from a hot fire can easily reach 5ft long. Additional flames at the top of the stack occur because there is surplus oxygen available at the flue exit.

Sort of, the flames at the top are because to oxygen was all consumed before the exhaust got to the top of the stack. There it had 3 things needed for fire- heat, fuel (unburned wood gases) and oxygen, thus it re-ignited. To eliminate that add air over fire. On a 2x3 not likely worth it, but if you grow to a 2x6 or larger it helps a lot with longer intervals between fueling, faster boils and less wood needed.
