Many maple syrup nutritional panels state that there is 24 grams of sugar per 2 tablespoon (29.8 g) serving.
That sugar content seems to infer that a bottle of maple syrup would have a Brix of 80.5%? (24 grams is 80.5% of 29.8)
With Maple Syrup being 66 BRIX at 60 degrees F, Maple Syrup should theoretically have a sugar content of 17.91 grams per two tablespoon serving.
How can Brix be 66% and still have 24 grams of sugar (or 80.5%) in a 29.8 gram serving?
