Anyone have any information on using a pressure cooker for heating up syrup to the proper temp for cream or sugar?

I don’t think a pressure cooker will work because you need water to evaporate in order to get the correct density for those products.

Steve Childs from Cornell has done work using a pressure cooker with applied vacuum to do a very rapid cool down for products like cream. He might be able to help, or his information might be out there.

Thank you.I attended a seminar and that is where the info came from. However Steve did not go in to much detail about it that day. I will reach out to him.
