Does anyone know what the boiling rates are for a 2x8 evaporator with 3' syrup/5' raised flue vs 2' syrup/6' raised flue pans would be?

I would assume the boiling rate would be slightly less, only because you are losing 1 foot of raised flues. Most of the evaporation takes place in the flue pan. If you are boiling concentrate though... the extra space in the syrup pan would be good because there is less water to boil out. My evaporator has the 2x3 syrup pan and has worked out well for boiling concentrated sap.
