So I was wondering is there anything wrong with using galvinised steel for a steam hood? Does it affect the syrup if condensation would drip in a little? Just Curious Thanks

Many people used galvanized and materials containing lead for many years and probably never thought twice about it. But with modern practices and knowledge about health hazards i think it would be wise to avoid galvanized altogether unless it's on your smoke stack. Granted it's not directly contacting the sap but the condensate, if not diverted will go right back into the pans increasing your boiling time and potential for contamination or off flavors.

The reason I asked is because i have a piece that would work. I would pplan to put channels at the bottom to collect condesation however there could be some drip off the top. Thankyou for that information!

not really a good idea, galvanizing contains lead.
