With it being a challenge finding canning jars I made the switch over to pint and quart decanter jars. While I was bottling syrup up in pint jars it dawned on me on how full do I need to fill these so there is atleast 16 fl oz in each jar? How full do you guys fill them?

I fill mine to the bottom of the threads. Hold at an angle until it starts going up the neck and you should have not problem with too much foam.

You could always take a known 16oz container, fill it with water, then pour it into your new jars. Or use a measuring cup and do the same thing.

nearly to the top...the level will drop when it cools!

I suggest measuring 16 oz hot, add at least 1/2 oz. Then as it cools you should still have 16 oz. If just for home or gifting use, no issue. I have never used canning jars so I can't help more than what I said.

Fill them full. You don't want to be the guy selling syrup containers that don't look full. Just my 2 cents and what I do Personally.

Just like canning anything, leave 1/2" head space. make sure to wipe off the lip of the jar place the cap and screw on the ring.
