I wanted to try something new this year and have been boiling down some sap to a point where it's like extra sweet water, but not completely in syrup form.
I found that it's great for making smoothies and sweet tea.
I'd like to be able to store this delectable treat long term too.
So my question is ...
Will sap that isn't boiled all the way down to keep if jars are sterile and its put in hot?

I don't think it will keep. I think it will ferment. Just my opinion.

Not high enough sugar content. Will go bad. This is the same type of thing people do when they experiment with canning recipes. Ends badly

just make maple sugar with your syrup and make a simple syrup with it. basically 1 cup of water to 1 cup of maple water... basically the same thing as you're doing. we do it in the summertime and make maple mojitos.

We often use the boiling sap to make coffee and hot chocolate. My nephew calls the hot chocolate the muddy maple.
I think the only way to keep it safely would be to freeze it and thaw when needed. I froze both fresh sap and 1/2 cooked for a 4H presentation I'm giving when we get the Corona all clear.

Did you or can you consider the freezer? Might get better long term storage results. Just remember that if it is not covered in the freezer, say it is ice trays the water will sublimate off and it will work towards syrup or beyond. Lightest clearest syrup you will ever have because it will gain no more color in this frigid long slow sublimation process.

Thanks for all your input. I wish I had enough freezer storage, but living offgrid doesn't allow a large freezer. Probably will continue to do as we've always done.
if you buy an ultrafiltration unit it will keep for 4 months. besides that will spoil in 48 hours

We take the straight sap and freeze it in 2 liter bottles, then defrost it and carbonate it with one of those Soda Streams. Our sap is quite sweet when it comes out, so no need to reduce it and it keeps just fine.
