Im running a batch right now and im worried im ruining the batch because i have a preety thick burnt ring around the entire surface of the boiling sap. Is this normal am i doing something wrong? And will it affect the flavor???

Take temps. I've had a ring before mainly from foam and sediment and the syrup was fine. I do skim a lot when needed and that helps.

I didnt realize i was suppose to be keeping track of temp while boiling am i suppose to not let it get over a certain temp or the batch is ruined? Ive been consistently adding cold sap so i didnt think about it getting overly hot

When I boil too hot and the flame comes up around the pan I get a burned ring. Keep the flame under and keep an eye out for that.
