How long can sweetend pan sit between boils?

Wondering how long a pan that is sweetend can sit between boils if the temp freezes or close at night and gets to the 40s in the day? Do you have to boil everyday, every other day or longer?

With highs in the 40's you should be good for several days without boiling. Over 3 days, you should bring it to a boil to kill any bacteria that is growing. One thing to keep in mind, if you have a float box, you should either sterilize it with hot sap or empty it. The warm (not boiling) sap will be a haven for bacteria to start growing.

Sometimes days sometimes hours. Keep it as cool as possible. Check it before you start to boil. Things can happen. A lot of us have high brix sap in there too. That and warm conditions can lead to spoiled sap.

Think of it as an open container of milk. If it is really cold (below freezing), it'll be fine for a good amount of time. In the fridge (up to low 40s F) it'll keep for a while (although an open evaporator is exposed to a lot more microbes). When it gets to high 40s or 50s F, it will spoil much faster. Warmer than that and bad things happen very quickly. Microbial growth is exponential. Things may seem fine for a while, then the population explodes.

Dave got it right. Follow that advice and you should be good. You only need to boil it for a few minutes (and make sure all parts get hot...including float boxes).
