so this is my fourth year making syrup on my 2x4 raised flue rig. this year has been a real pain with niter in my syrup bay on my front pan, i can only process around 100 to 150 gallons of sap before my pan starts to niter up and cause drawoffs / temps to fall off. i fight it for while then give up and shut down and clean my pan. i have done nothing different , boiling fresh sap, depth in pans the same , loading wood the same no changes to my system. is it just because my pan is getting older is it what mother nature giving me in the sap? just looking for any thoughts and ideas.

just the way it is. nitre is different from year to year.

Do you have the ability on your evaporator to switch drawoff sides? That'll help a bit, although on a small rig it won't help for long.

thank you for the info. no i have to shut down and turn my pan and if im shut down i figure i should just clean

So I have a custom set up rig 2.4.5 from Mason with a small front finish pan. I was going to get a another stainless pipe welded up for switching draw off sides. But now this thread makes me realize I should probably just plan on cleaning the pan every few boils? This is a pic of the set up.

I had a 2x6 Mason. 2x2 front pan. It was not reversible. But when it was built up it was way into the 4th compartment. So reversing would not have helped.
