Since my season is over, I am working on a pan build for next year. I am converting a 33 x 24 leader divided pan and a 18 x 24 flat pan into a hybrid setup. I am plan installing twelve 4 x 30 x 3/4 raised flues (3/4 inch spacing) into this pan. The pan has 7.5 inch sides. I plan to run at 2 inch depth thus 4 inch flue, two inch sap level, and 9 inches free space. My question is will adding an additional 7.5 inches of additional side be enough to keep the resulting fountains of boiling sap in the pan?
If 21030you can read the chicken scratch on the side it looks like this pan design on egg arch will do around 31.7 GPH and require 15 gallons in it to start and safely operate. Plus the front pan that I have in the photos. This design also assumes the break I hope to use can do 3/4 inch flues.
