Raised flu sap level ?

Just switched from a continues pan to a raised flu. How deep should I set the floats to before firing to be safe? 1" over flue and 1-1/2" in syrup pan? Never ran one and would rather start out cautious at first. 2' x 36" flu 2' x 18" syrup pan.

Those numbers are probably safe although 2" in both would not hurt till you get a feel for how she boils. It's ok if you occasionally see the top of the flues in the back pan when you have a rolling boil.

Start at about 1.5 to 2" in both. As you gain confidence start lowering both.
I now run my raised flue at 1/4-1/2" over the flues and the syrup pan at 1" deep.
