Should I be worried about the lines starting on the bottom of the pan? it barely simmers when open...

also... I feel like this is a silly question but should I close the top? it boils much better, but obviously holds in the moisture...https://uploads.tapatalk-cdn.com/20200216/16449e2a79ea48db9d4a4ba5b94022ae.jpg

I clearly AM going to have to get a regulator that allows for more gas so the flames can get hotter

Try closing the lid partially and hold it open with a block or brick. You will still have to monitor your pan regularly. I believe once you get the other regulator this problem will go away and your boil will improve.

I also made the mistake of leaving the heat guards in it. they are supposed to make it more even hear but I am sure they are reducing it by not allowing the heat to go directly to the pan bottom. they will absolutely be coming out after I'm done tonight.

next question... should I be concerned with these spots?https://uploads.tapatalk-cdn.com/20200216/56ef395d97840b92b247e52ad402b7cf.jpg
