how do you determine how much to pay for Sap.

Attached is a picture of sugar content on side and price on top
2.2 would represent $2.20/lb based on a 50/50 split

I think there is a chart somewhere. I have seen it, just not this season. IIRC it might be in the 25 cents to 30 cents range depending on the sugar content. I always think of my sap being worth about a dollar a gallon to me as I make it into syrup and value added product. That is not connected with this chart I am referring to. I have seen this is past issues of the Maple Digest. Someone will find it for you. Maybe on line somewhere?

I have seen it also boiled on shares. They collect and bring to you for one half the finished syrup you make.

I usually pay based on the bulk price of syrup. My bulk buying price has been $2.20-$2.40/lb and using the sugar content I can figure out the syrup content of the sap. I split that 40/60 or 50/50 with seller. Most of my sellers just want some syrup and the rest cash. For example, if the sap is 2% and I have 200 gallons, I'll make about 4.6 gallons of syrup off of that which is worth $125 at $2.40/lb so I would pay the seller $62.50 for the sap. I typically give them a receipt for the sap when I pick it up and we square up at the end of the season.

Is this similar to the one Cornell put out?

It is based upon an early version of the Cornell sap-buying spreadsheet (and acknowledged as such), but has more options.
