I made 3 quarts of syrup last night and it was off flavored. I can't describe exactly. It doesn't taste bad. It just does't taste good. Not sure where/why it went bad. Followed my usual process. Anyway I was wondering what could be done with it. I have thought of making sugar for the last few years. Could I use this for sugar? thanks!!

That often gets rid of off flavors, but not always.
Back when I read the book about Bruce Bascom it mentioned among many other interesting facts, that they made sugar with off flavored syrup. It seems the extra heat helps get rid of the off flavor.
By the way, it was an eye opening bio. about Bruce and a huge number of very scary things he did when buying huge amounts of bulk syrup that he was lucky to come out smelling like maple.

i've used off flavored syrup for sugar with success. or use it for cooking.
