Approximately how long will it take me to make syrup boiling 120 gallons of sap over a wood fire, in a 2' x 3' X 8" stainless steel pan with temps around 40 degrees F?

Depends on a number of factors mostly revolving around how hot a fire you can get under your pan. Best case scenario without a blower is probably 6 gallons per hour evaporation rate leading to about 20 hours of boiling. With a blower you could do upwards of 9gph leading to about 13 hours boiling.

We could boil it in a hour.
Yea 20 hours sounds about right for that size rig.

I had a 2x4 divided pan and I would make my arch glow. Most I could get was 13gph.

120/13= 9.25 hours at best. On a 2x3 I’m thinking more around 8-10gph.... Flats might be on to something as usual...

Thanks to all who responded. I think I'll plan to boil over two days!
