I have a friend looking at a divided flat pan. The pan has some warping. I’m wondering how much warping is too much. I know that lots of people make great syrup on warped pans but there must be some point where it becomes unusable. Thank you.

It's warped too much if you can't get it to sit level on your arch.

That makes sense. Do warped pans cause other problems? Does niter collect more readily in the low spots or anything like that?

I would worry more about hot spots. My front pan has a few little ripples and i get around that risk by running the pan just a bit deeper.
