I've been aging in burboun barrels for 5 years now.
Also selling burboun barrels to age Maple syrup in .
The questions people ask if the barrels are wet?or recently drained?I can understand for a leakage standpoint but if we are aging it doesn't matter if it's wet( the wet barrel soaks into the wood adding to the real flavor where we get the unique flavor from.
so if a barrel is dry you should still get the same flavor! Having a wet barrel with burboun in it would be considered more of infusing..
What's your thoughts?
