You've got it! I've got 68 taps on 3/16" tubing (3-lines), I collected 185-gallons of sap TODAY! They are on a slope (aka "natural vac.). I installed a vacuum gage at the top of one of the runs: it measured 27.5 in of mercury. It's totally nuts. I'm a convert. It looks like you will need a barrel, not a bucket :D

Either get a food grade barrel or empty that bucket every hour or 2 at the most. Don't forget, sap runs all night if no freeze that night, it does slow down in a couple of days however with no freeze.

Yes, Thanks Dave. What you don't see is a food grade 7 gallon bucket inside of the tote. The tote was used for carrying all my supplies. There is a 55 gallon foodgrade barrel there now banked in snow to the rim.
