Add sweetness to pan

Where and when do you add the sweetness to the pan from the last boil

I would say at or near the draw off area. That should help you make syrup sooner. Remember where every you add it is not a wrong thing if its in the evaporator it will become syrup. Might just take a little longer. I dont draw any out when I stop. I dont even block the front from the back. I know the first draw will be large but that gives me time to get a =few other chores done in the sugarhouse.
