Ok so my first batch of 5-7 gallons took 6 hours!!! In a tall turkey cooker pot. I really need to find a pan quick to do my next batch before it goes bad and i dont wanna be all day because i have probably 15 gallons or so now. Are there any stores that sell pans that would work for now other than ordering the right ones off the internet

Full size steam table pans (stainless steel) are available on Amazon quickly and work better than a tall pot (more surface area to steam away water).

Depends what you are using as a burner / heat source, but you could put these on the Turkey fryer, your grill, or even your stove. Just dont boil the raw sap in your house.... too much steam. It's better to do finishing of the near up syrup in the house.

A lot of cooking supply stores carry them too. You might find them in your area.

You don't say where in Maine you are, but, for example, Restaurant Barn in Ellsworth definitely has them. Ask for full-size steam table pans. If you have access to dry wood, get some steam pans and whip up a block or barrel arch quick. You'll be miles ahead of the turkey cooker.

Please check out the folks at Vermont Evaporator Co. They have a banner at the top right of this page. They sell awesome pans for the hobbyist at very good prices. They are based in Montpelier, Vt.
