View Full Version : 3% sap and fancy syrup

In spite of temperatures we thought would produce a good first run we had only 50 gallons from 136 taps. It was a huge surprise that sugar content of the sap was 3% and or first batch of syrup turned out extemely light fancy and tast was fabulous. I’m wondering if our crappy winter had anything to do with the high sugar content and super nice syrup? Family had a lot of fun with first boil of the season.

Early season syrup is often light in colour and flavour because the bacterial action that causes darker syrup has not taken hold due to low temperatures.

Same results here. Our sugar content is averaging 3+ with our lowest at 2.4. The syrup has been super light as well
