AMAZING Crystals in my 2018 Syrup

Okay guys here is my question. I finished my first run of 2019 syrup. I was taking it to the storage I have in my basement. I was moving some jars around and saw something in a jar of 2018 syrup. I opens it and in the bottom was two large crystals. The rest of the syrup in the jar is fine and the seal was perfect. Has anyone ever seen crystals this big? 19567

Yes.....my first year when I found out that using a thermometer is not an accurate way to measure final density for syrup. I was way over and lots of sugar candy crystals in all my containers.

You boiled to over density, those are what is called Rock Candy. When I was in elementary school, the little mom & pop store down the street sold that. It is really good. Next time use a hydrometer and know how to use it. You will end up with more syrup and less candy. That is just sugar crystals.
