My question pertains to finishing the syrup inside after I have removed from evap. How long can I keep it in the fridge before I finish the process.. Was trying to cook another batch and then finish all together.

A bit of a newbie here haven't made maple syrup in 20 + years with my Grandad when I was 11... can't seem to remember much of anything.lol

I often produce two gallon batches during the week than finish and bottle on weekend when I have some help.?i store the batches in my cool basement.

If it is almost syrup and just needs to be brought to final density if you store it in the fridge you could hold it for even 2-3 weeks no problem, as long as it boiled hard before being removed from the outside evaporator.

My 1st cook was on Saturday. Cooked 38gal. Down to almost
1 gallon. Took 6 hours on a homemade block arch style cooker. I'm hooked now!
