I have some fresh sap I just collected (@800 gallons) it is cold and has some ice in it from the buckets. Could I concentrate it tonight from @2% to @4% and cook it down tomorrow afternoon? I use a procon high pressure pump on my RO and it seems to bring the sap temp up very little. The sap is stored outside in the shade and will be kept there till I'm ready to boil. it is to be 20* tonight and barely above freezing tomorrow. I know there is a fair amount of info here on this subject but there are many variables... I don't mind making dark syrup as that is what I sell the most of. I can process @ 170 - 190 gph on my evaporator. I am looking to save work vacation time by RO'ing tonight and holding the sap over till tomorrow afternoon. if not I'll have to take some time off of work to get it done this afternoon and this evening.
