I'm sure others on the forum have seen one of these beer making supplier web sites, but I had never looked at one before. They have some interesting equipment and components that would be useful for maple syrup production as well. I'm thinking about buying one of there compression fittings for inserting a digital temperature probe through a 1/2 inch or 1/4 fitting for my evaporator. https://www.brewhardware.com/product_p/pcomp1.htm

I used something similar (weldless bulkhead) from the same company to add a thermometer to a pan and it worked great. I also replaced all of the lead based brass fittings on my evaporator with stainless bulkhead fittings.

On a previous pan set I drilled a hole and silver soldered a fitting on for a thermometer. Since then I've used a few of the SS bulkhead fittings with good results.
I used similar stainless bulkheads to add sight glasses to my pans

Can you share the model of thermometer (https://eatrbox.com/best-candy-thermometer/) you're using? I tried many but they don't give accurate temperature.
