I haven't. But if it's stainless, why not try it!

16x40 sounds like a cross flow pan off a 40" wide evaporator. Make sure you can figure a way to close off the ports you will not need. It might just be a cover like this with a clamp: https://www.brewershardware.com/Sanitary-Fittings/Tri-Clover-Caps/#
and a gasket https://www.brewershardware.com/Sanitary-Fittings/Tri-Clover-Gaskets/ use the silicone ones
and a clamp https://www.brewershardware.com/Sanitary-Fittings/Tri-Clover-Clamps/#
With this type of fittings you will find that you have 2 sizes to watch, the size of the pipe and the size of the outside face. None of those will be able to be exposed to the fire so you need to protect them.
Next, study the pictures closely. Make sure you are seeing any damages. Is it welded or soldered, if soldered use a test kit (available from hardware stores) to test for lead.
Can you drive to pick it up, if being shipped ask for it to be packed in a wooden crate, well padded between the crate and the pan.
