Birch Sap and Syrup Production

The collection of birch sap and production of birch syrup are growing practices in the northeastern US and Canada. This webinar will present basic information about these practices as well as results of research conducted by the University of Vermont Proctor Maple Research Center on the sap yields from birch trees in the northeast, the profitability of adding birch production to maple operations, internal wounding from tap holes in birch trees and sustainable tapping practices, and processing practices for producing birch syrup with optimal flavor.
