Interesting. Has anyone here ever tapped a sycamore? Hows it taste?

I tried some sycamore syrup last year. Interesting butterscotch flavors but it had a bitterness to it as well which was unpleasant. Could have been too late in the season and the tree didn't produce much sap either.
