Early season sap, not budding, sap was frozen, nothing was wrong until I filtered.
Sap when boiling smelt wonderful, tasted great, nice light delicate color. Perfect appearance.
I poured about a gallon thru my prefilters and wool filter,,,first time using them filters this year, but they were not new filters either.
The syrup now tastes weird, uumm,,,maybe mouldy is the word. One of my prefilters was dirty after better inspection. I rinse my prefilters and reuse them a few times.
I want to blame the prefilter. Maybe I picked up weird flavors off the wool filter, it has been sitting for a year.
I keep my wool filter in the freezer for the sap season, rinse it very well and store it for the off season.
Next batch I made tasted perfect, same wool filter, new prefilter. Too little too late !!
Is there anything I can do to my "funny tasting" syrup to try to make it better ?
