So I have a question to ask. How much syrup per tap is possible on gravity? To be more specific I am using 5/16 taps, 3 to 4 feet drop tube into 5 gallon bucket.

I know typically is a quart per tap, but this season I may get over 0.5 per tap.

Think of a quart per tap as a 20 year average. There will be good years and bad years that make up that. If you really want to kill the fun of it, there will be statistical Means and Standard Deviations to calculate and ridiculous amounts of records to be kept. One gallon per tap is not outside the realm of possible from large trees with great crowns with only one tap during years when sugar contents are high and the season is long and the weather is great. In other words, not very often.

It all depends on sugar content in your trees. Using my numbers for this year. My average sugar is 1.6 and i have collected 2200 gallons of sap. 53 to 1 sap to syrup on 2200 is 41 gallons of syrup. 41 divided by 217 taps is .184 gallons per tap. Now same situation at 3 percent sap on 2200 gallons of sap is 29 to 1 at 75 gallons of syrup or .354 gallons per tap. My math may be off a little as ive been up all night but you can get the picture. The same taps can produce 3 percent next year and 1.2 the year after so as Cedar Eater says it is an average and nothing set in stone.
