Subtle burnt smell?

Left my Half Pint a bit too long, had a subtle burnt smell, opened the sap feed valve quickly, closed the draft, and drew off as quick as possible. Pretty sure I saved it...boiled off nearly 60 gallons in a Half Pint. Temps were around 210-215 deg F at draw.

I had a half pint for two years. The burnt smell could be from a scorch but... if you are drawing off at 210-215, you're not hot enough to do that. If you meant to type 220-225 that's a different story...
