I'm sure this has already been asked. A good recipe for maple coated nuts. Going to try it this week

Definitely go to the candy, etc thread and check out the different methods.
For me, the key is to first heat the syrup to 245 in a big pan on the stove top before tossing in your nuts. You will get a nice tan color as you stir (rapidly) with a wooden spoon. The nuts will separate as you stir and you will get a candied coating.
You have about 1 minute to quickly stir the nuts in the pan in the super hot syrup. Next, spread the nuts out on a cookie sheet lined with parchment paper and salt and spice, if desired. Peanuts seem to retain their crunchiness. Pecans, however, get a bit soggy so I put pecan trays in the oven at 350 for about 15 minutes, then let them fully cool before storing.

to keep the nuts hard/crunchy I roast them slightly in the oven before stirring them in the syrup. works pretty good.
