View Full Version : Old Sap?
Back yard boiler been doing this for a few years now. I had a question about sap age. I have sap that I collected March 1st (23 days ago). It has been kept out in the cold since then. I have removed approx. 1/3 of it as ice. It still looks fine clear not cloudy. Is it safe to boil? If so how will it affect syrup quality? How long is too long and are there indicators that would make someone question sap quality? Thanks in advance.

Sounds like it has been held at near freezing the whole time. 23 days seems a little long, but if it is clear and not cloudy I would give it a try. It will be safe when you boil it, the question is if it is spoiled and will have some off tastes. Maybe try a gallon or two on the stove to see what you get.

Just got back from dad's shack, he happened to make a batch of syrup from 21 day old ice chunks today.
Syrup was very good, darker compared to what I made that week with fresh sap.
