what are the ups and downs for a flat top cupola i cant seem to get the nessesarie v roof on it. i dont think it will hurt i would think the steam would heat the wood and melt the snow if there is any.

If you have the tools to build a pan, why don't you make a steam hood and pipe the steam through the roof?

i dont want hoods because it takes away that smell of sap cooking

I have a hood and still get plenty of aroma.

yeah but i dont want to ditch the true sugarhous look and just run stack out the top.

When you get a bigger unit you sure will have all the smell that you need and then some. My cupola isn't long enough and I don't want to remodel so my hood is a good investment as far as getting the steam out.
