I have potentially over boiled a recent batch of syrup with a normal than higher density reading! Just wondering how long it will take to see the sugar crystals in bottom of bottle if that happened?

I sometimes see crystals in my draw off bucket overnight. I draw off heavy (by 1 - 2 degrees), and adjust when bottling.

I bottle all my syrup around 68 brix because I prefer thicker syrup. I don't tend to see a lot of crystals forming until after I open it to use it and it's in and our the fridge a lot.

It can take months. If you're just barely over density and have no nitre and brand new clean glass, the crystals have little to inspire formation. Opening the container may provide the tipping point needed, but even then it might take a while.
