I have around 100-125 gallons of sap collected. Small, 2 x 4 flat pan evaporator. It usually takes a good amount to sweeten the pan, so I like to hold off so that the sap doesn’t sit in the pan too long before the next run.

The weather doesn’t look fabulous for the next few days, so I’m considering boiling what I have while I wait till it runs more...

Thoughts?

Boil it before it goes bad. I'd rather start over than loose almost 3 gallons of syrup

I would boil it before you lose it. If you boil it and it sits for a while just bring it back up to a boil again to kill anything in there. Should be able to save it for a while doing that until another run comes.

I would boil it and then just watch it this week. If it gets cold and stays cold I think you'll be fine for a while. If you are worried just drain the pan and finish it and start over.

Definitely boil it ASAP. Boiling it will kill the bacteria that eat the sugar it will also keep longer before it spoils.

When in doubt, boil it
