Ron is collecting from our front yard trees. Sugar at 2%. Never had it so light. Tastes OK. Nothing like we ever had on the farm. Used to rich color and flavor. Could this be from being village trees and not enough nutrients? One batch tastes so strange not sure what to do with it. Just bottled it and put it aside. Help!

OK just take a deeeeeeep breath. Esp if the trees you're collecting from are new to you, there may be some characteristics in their sap. I wouldn't worry about the nutrients. And exactly what did the strange-tasting batch taste like? Check out the Flavour Wheel and see if it's on there.

I suspect you just made "Golden" grade syrup. Makes good confections.

One pint of something. Labeled it and it can just sit there. Ron just finished another pint and its great. Light but with good flavor. So just the 3 trees and 6 taps are keeping him busy. The garage is a great sugar shack. People walking past this house are pointing and staring at the buckets. We're in a rural community,all ag.here,but most still don't know where food comes from.so about 8 gallons for a pint.

Sounds a lot like Golden Delicate syrup, unless it has a off flavor? We did not make any golden yet this season, and I doubt if we will come back form Very dark strong taste now.

Ah ha. A little research on here and interrogating my husband solved the mystery. He's not used to boiling such small amounts. Put in a drop too much canola oil! Gag. Yuck. That's what I tasted. Keeping that pint separate. May use it for baking and cooking. He won't do that again.
