We had a homemade firebox with a flat bottom pan that we used for years. We only made a couple of gallons every year. Last year we had the good fortune to purchase a used arch and a pan that is divided into eight segments and the bottom of each is made to what appears to be tapered to flow through out the entire pan. Should the pan be installed level from front to back and side to side? The pan is 3' x 8' and also would like some information on how to use it. Should we be feeding a continuous slow feed of sap? Should it be preheated or just a slow feed of cold sap? This is a new adventure for us and should be interesting.

Also our old firebox was just some concrete block to form a fire pit to feed the fire and set the pan on. With this arch is there any special instructions for use. Also which way should the pan flow? ( Firebox to chimney or vise versa?)

Thank you

Pictures would help but I believe you will want the pan to be level on the level arch.
Good luck. Many ways and many rigs out there. So we may need some more information to help you. 3 x 8 is a good sized pan. cold or preheated sap will work. preheated sap will not kill the boil. Therefor more efficient.
