View Full Version : Draining the evaporator and storing near syrup

Was wondering how long I can store near syrup in the refrigerator before finishing. I have a lot to do coming up. Will be boiling tomarrow and Thursday. Then was going to drain the evaporator and finish it Sunday. Think it will be ok?

I think you'll be fine with that plan. You can also freeze it if longer term storage is needed but I think it would keep for quite a while in the fridge.

The term NEAR SYRUP is key to your plan. If you hot pack syrup that is 2-3-4 points under for a week your fine.

It will be fine as long as it is kept cold. After boiling to "near Syrup" density you have killed the bacteria, it will then keep in the fridge for a few weeks if needbe. Finish it to proper density before bottling it.

I have left nearup in a bucket in the fridge for at least a month once. figured it would have a skim of mold in top by the time I got to it, but it was fantastic. Boiled it to density bottled it and it was great.

I've read "hot packing" in several threads, could you please explain what hot packing is for a novice. Thanks

To me, "hot packing" refers to putting hot liquid into a container and sealing it with a lid. Other folks may differ with me on terminology. Personally I use half gallon mason jars. I put the hot "almost syrup" into the jar and snug down the ring and lid. It keeps in the fridge for a week or more without any problem, til I have time to filter, finish to density and bottle it. Seems to help me to eliminate some of the sugar sand because it has a chance to settle out of the syrup. Just my 2 cents!

Hot packing refers to bottling your syrup between 180-190 F and then laying the bottle on its side for a few minutes to sterilize the cap and neck of the bottle. That ensures almost all bacteria, yeasts and molds are killed so you can store it on a shelf for 6 months (or more).
