Last week I finished my sap by thermometer 219 degrees, didn't seen to thick, didn't have a hydrometer ,picked up a hydrometer the other day, boiled down some more sap today and going to finish it tomorrow .my question is can I open up the stuff I jarred last week and add it to today's boil when I finish it tomorrow so I'll be positive it's actually syrup..thanks

Sure. Or you could do a 60 degree cold test with the hydrometer.
