Can a scorched pan be cleaned off just like any other "dish" or does it need something special? Mostly asking because I have some used pans I could acquire but they look burnt up....not sure If they are salvageable.

I like a 50/50 mix of hot water and vinegar. Let them soak for a few hours and see if that works.

How about using a very mild abrasive called Barkeepers Friend. If you rub it into a moist paper towel and then on the burnt spot eventually you will remove the burnt spot. I would rinse the pan well with clean hot water after using it.

Soak in vinegar and then then scrape with a copper pipe.

Vinegar is cheap why scrimp go full strength and use some heat. You will not hurt a thing. You eat pickles don't you. Your pan will never be the same so move on get the carbon off and get back to cooking. When the season is over spend some time and buff it up. Make the big scratches small.:-|
